Roast Chicken

Place frozen chicken in refrigerator overnight or in a sink full of water for a few hours to thaw if cooking the same day. You may choose to brine the chicken prior to cooking. Use 3/4 cup sea salt, 3/4 cup organic sugar and a gallon or so of warm water in a stock pan (use warm water to dissolve the salt and sugar then add ice to cool the brine). Let chicken soak in brine for a minimum of 4 hours or overnight. We like to brine ours for about 8 hours. Take chicken out of brine, rinse with cold water, pat dry. Be sure to take giblets out and place in separate pan on stove and turn on to boil or saute the giblets while preparing the chicken.
Cut up celery, carrots, onion and place in bottom of roast pan to create a bed for the chicken to rest on. Add a small amount of chicken stock to bottom of pan to prevent it from burning. Set chicken on bed of vegetables in roast pan. Season with garlic powder, onion powder, sea salt and pepper. Optional: mix grass fed butter with fresh chopped herbs like rosemary, thyme, parsley and oregano. Make slits in chicken skin and place butter/herb mixture under the skin.
Roast the chicken in the oven @ 350 degrees until the temperature of the chicken is 160 degrees. A 5 lb chicken normally takes approximately 1 hour and 20 min to cook. Take chicken out of oven, cover and let rest 10-20 min before cutting. Remove all meat from the bones, serve, eat and enjoy! Save the bones for bone broth....

Gut Healing Bone Broth

Take all bones, skin, cartilage, neck, giblet stock, leftover roasted vegetables and place in a crock pot or stock pot. Fill with filtered water, add a generous amount of sea salt and pepper. Add 2 Tablespoons-1/4 cup raw apple cider vinegar (helps to draw minerals out of bones and into the stock). Add any vegetable scraps like carrot peelings, leftover onion and celery to stock pot. Let simmer on low for 12-24 hours or longer. Strain off the bones and add more water for a second batch of broth if you choose. Otherwise toss the bones out. Use broth for soups, cooking, in place of water in recipes like rice etc.

Chicken Soup

Take bone broth (prepared as mentioned above) and put in stock pot. Add in chopped carrots, celery, onion, kale, sea salt, pepper, turmeric, leftover chicken, herbs like rosemary, thyme, oregano, parsley. Let simmer for 20-30 min and serve.
